Discovery

The chocolate biscuits were invented by American chef Ruth Graves Wakefield and chef Sue Brides in 1938. He discovered the recipe during the period when he owned the Toll House Inn, in Whitman, Massachusetts. In this era, Toll House Inn is a popular restaurant featuring home cooking. It is often incorrectly reported that he accidentally developed a cake, and that he hopes the chocolate piece will melt, making the chocolate cake. In fact, he stated that he accidentally found the cake. He said, "We have been serving thin butterscotch bean cake with ice cream Everyone seems to like it but I try to give them something different So I came with Toll House cake." The Wakefield cookbook, Toll House Tried and True Recipes , was first published in 1936 by M. Barrows & amp; Company, New York. The cookbook edition of 1938 was the first to include the recipe "Chocolate Confectionary Chocolate Cookies" that quickly became a favorite cake in American homes.

During World War II, soldiers from Massachusetts stationed abroad distributed the cookies they received in care packages from home with soldiers from other parts of the United States. Soon, hundreds of soldiers were writing at home asking their families to send them some Toll House cakes, and Wakefield was soon flooded with letters from around the world asking for his recipe. So start the national craze for chocolate chip cookies. The recipe for the chocolate chip cake was brought to England in 1956, with Maryland Cookies one of the best-selling chocolate chip chips in England.

Today

Although Nestlà ©  © 's Toll House's recipes are widely known, every chocolate chip brand, or "half-sweet chocolate" in Nestle, sold in the US and Canada contains variants of chocolate chip cookie recipes on the packaging.. Almost all cookbook-oriented cookies will contain at least one type of recipe.

Almost all commercial bakeries offer their own version of cookies in the form of roasted or ready-to-baked packages. There are at least three national chains (USA/North America) selling freshly baked chocolate chip biscuits in shopping centers and stand-alone retail locations. Some businesses - including the Doubletree hotels - offer freshly baked cakes to their customers to differentiate themselves from their competitors.

In honor of the chef's creation in the state, on July 9, 1997, Massachusetts set a chocolate chip cake as an Official State Cookie, after being proposed by a three-class class from Somerset, Massachusetts.

Composition and variant

Chocolate chip cookies are generally made with white sugar; Brown sugar; flour; a small amount of salt; egg; yeast substances such as baking powder; fat, usually butter or butter; vanilla extract; and semi-sweet chocolate pieces. Some recipes also include milk or beans (like chopped walnuts) in the dough.

Depending on the ratio of ingredients and mixing and cooking time, some recipes are optimized to produce a softer and chewier cake while others will produce a crisp/crunchy style. The texture of the chocolate chip cookie relies heavily on the fat composition and the type of fat used. A study conducted by Kansas State University shows that carbohydrate-based fat substitutes are more likely to bind more water, leaving little water available to help spread baking cake. This results in a softer and more cookie-like cookie with less spread.

Common variant

  • Cookies M & amp; M , or party cookie , replacing the chocolate chip with M & amp; M's. This recipe was originally used as fat, but has been updated to use butter.
  • chocolate chip cookies use chocolate dough with chocolate or melted chocolate. Variations on this cookie include replacing chocolate chips with white chocolate or peanut butter chips.
  • Macadamia chip cookies have macadamia nuts and white chocolate chip. This is a signature cake from Mrs.'s bakery. Fields.
  • Chocolate peanut butter replaces vanilla-flavored dough with peanut butter.
  • Chocolate chip cookies dough baked on a baking dish and not a baking sheet in a chocolate chip cookie bar.
  • Other variations include different sizes and shapes of chocolate, as well as dark chocolate or milk chips. These changes cause differences in taste and texture.
