Liquid chocolate cake is a popular dessert that incorporates elements of flourless chocolate cake and soufflà ©. Its name comes from the center of liquid chocolate dessert, and is also known as chocolate moelleux (from French for "soft"), chocolate lava cake , or just lava cake . Should not be confused with chocolate fondant, a recipe containing a little flour, but plenty of chocolate and butter, then melted on the ceiling (but not on the plate).

US-based chef Jean-Georges Vongerichten claimed to have found a liquid chocolate cake in New York City in 1987, but French chef and chocolatier Jacques Torres denied this, arguing that such dishes were already in France. According to Vongerichten, he pulled a chocolate sponge cake from the oven before it was done and found that the center was still watery, but warm and had good flavor and texture. Regardless of who invented the dish, Vongerichten has been credited with popularizing it in the United States, and it became almost an income of de rigueur in the upscale restaurant dessert menu.

The liquid chocolate cake contains five ingredients: butter, egg, sugar, chocolate, and flour. Butter and chocolate are melted together, while the eggs are stirred with sugar to form a thick paste, resulting in a denser, or separated, cake with whipped white to meringue to provide more lift and lighter yield. A tablespoon of thick coffee is sometimes added to enhance the taste of chocolate. Vanilla extract, salt and cinnamon are also recommended in some cases to add extra flavor.
Cakes are usually baked in individual portions in ramekin; however, there are a number of creative variations in chocolate lava cake or liquid chocolate cake such as preparing cakes in coffee or tea cups. Cakes can also be prepared in a microwave oven, not an oven in certain cases.
Presentations
Fresh raspberries, raspberry bushes and/or chocolate sauce, and powdered sugar powder are a distinctive improvement. A sprig of mint is sometimes used as an ornament.
