A brownie brown (usually called just brownie ) is a square, baked, brown dessert. Brownies come in various forms and may be either fudgy or pastry, depending on the density. They may include nuts, frosting, cream cheese, chocolate chips, or other ingredients. Variations made with brown sugar rather than chocolate in the dough are called blondie or blondie brownie. Brownie was developed in the United States at the end of the 19th century and was popularized in the US and Canada during the first half of the 20th century.

Brownies are usually eaten by hand, often accompanied by milk, served warm with ice cream (a la mode), with whipped cream, or sprinkled with powdered sugar and fudge. In North America they are a common lunch box treat, and also popular in restaurants and coffee shops.

One of the legends about the creation of brownies is from Bertha Palmer, a prominent Chicago socialite whose husband owns the Palmer House Hotel. In 1893 Palmer asked the pastry chef for a dessert that was suitable for the woman who attended the Chicago World Expo. He asked for a confection like a cake that was smaller than a piece of cake that could be put in a lunch box. The result is a Brownie Palmer House with walnuts and apricot glazes. The modern Palmer House Hotel serves desserts to customers made from the same recipe. The name was given to dessert some time after 1893, but was not used by cookbooks or journals at the time.

The first printed use of the word "brownie" to describe dessert appeared in 1898 Cookbook version of Boston Cooking School by Fannie Farmer, referring to individually baked molasses cakes in canned molds.. The earliest published recipes for the modern-style brownie brownie appear in Home Cookery (1904, Laconia, NH), Service Club Cook Book (1904, Chicago, IL), The Boston Globe (April 2, 1905 p.34), and the 1906 edition of the Farmer edition. These recipes produce a relatively light and cake-like brownie.
